Pulled from the cellar, at 7 years old it’s delicious. The peach and apricot are present throughout with the great mouthfeel courtesy of the wheat. Hints of rye along with the saison and foeder aging notes on the tail end as the tartness wanes

Released Nov. 11, 2017. Seriously sharp acidity, with a hint of fuzzy peach. Really balanced but one dimensional, plays off as a really nice sour but not necessarily a Saison. Fascinating development over time.
