Saga, single variety strawberry mead. Saga is a fairly new, Norwegian strawberry variety with a great sugar/acid balance, incredible aromatics and a really dark, red color throughout its flesh. These special strawberries were picked at perfect ripeness, vacuum sealed and frozen throughout the harvest season to stock up enough for a batch. After thawing and cold soaking for a day, the strawberries were pressed and buckets of extraordinarily good raspberry blossom and wildflower honey that we had set aside for something special was added. Small amounts of wild blueberries were added to naturally adjust and stabilize the color, as the coloring pigments in strawberries have a tendency to degrade during fermentation. -------------------------- 2022 -------------------------- Honey variety: Raspberry blossom and wildflower Strawberry variety: Saga *The vintage year shows the harvest year of the ingredients*
