Weighted average age: 52 months Lambik aged on freshly emptied old Amontillado sherry barrels (at least 40 years old). Poured on several occasions and events, while emptying the barrels for bottling. This lambik has been pulled straight from a very old Amontillado barrel that we sourced with Josefa Perez. A small and very old bodega in the shadow of the Iglesia de Santiago in the historical heart of Jerez de la Frontera. We filled this cask in April 2022 with five lambikken that we brewed end of 2019 and beginning of 2022. The barrel maturation thus took a good two years. The weighted average age of this lambik is more than 52 months. No panic... this beer has little to no carbonation - it’s normal!
