SERVED STILL, ON CASK - (NO CARBONATION) (One-Off for Wild Beer Festival Mullingar) Puro Salamino is a collaboration with Italian Winemakers & growers Vitivinicola Fangareggi. In Sept 2023 they cold shipped us 500kg of their beautiful hand - harvested Lambrusco Salamino grapes. We de-stemmed the grapes by hand & added the fruit to a tank for 5 days of carbonic maceration. After 5 days we gently crushed the fruit by foot & collected 300L of free run grape juice. The grape juice continued to ferment with their native yeasts for 9 months in oak before being blended with 2 year old spontaneous beer. Blend ratio 60% Salamino wine : 40% beer
