bottle date: 19/01/2023 Domaine des Hauts Baigneux is a small and renowned organic wine maker from Azay-le-Rideau, in between the cities of Chinon and Tours, in the Loire region, France. Thank you to Nicolas and Philippe for this wonderful collaboration. For this Druif, we macerated Grolleau must that we made ourselves from fresh grapes, for almost five months on three-year old lambik, before being blended with more such old lambik. Maceration took place on a small 600L barrel. The weighted average age of the blend is more than 34 months and the final fruit proportion is 372 grams of grape must per litre of Druif.
