bottling date: 19/01/2023 Domaine des Hauts Baigneux is a small and renowned organic wine maker from Azay-le-Rideau, in between the cities of Chinon and Tours, in the Loire region, France. Thank you to Nicolas and Philippe for this wonderful collaboration. For this iteration, we first let the must macerate for one month on its own skins before macerating it for almost four months. For that, we used four-year old lambik, before being blended. Maceration took place on a small 600 litre oak barrel. The weighted average age of the blend is more than 40 months and the final fruit proportion is 325 grams of grape must per litre of Druif.
