Märzen beer with local organic spelt. Brewed in March and aged in a cellar till October in freshly emptied biodynamic Pinot Noir barrels from Burgundy. Fresh barrels were hand picked for me by Simon Lecomte, my spontaneous brother of Ammonite brewery in Burgundy. Merci Simon! I know some of you know him and those barrels provided the perfect home for this little malty beer. As always it was brewed with organic local malt, hops and raw spelt. It is a homage to times, when beers were made in a season for the season and the notion of time had a different meaning. This one is also a collaboration with dear friend Jan of Pivovar Lajka with whom we share the mutual love for the classic and rustic beers. Here we present you with Mars.
