bottling date: 06/01/2021 · bottle count: 633 This Pruim features the Belle de Louvain variety, an ancient plum, popularly known in Brabant and Limburg province as Paterskloten and Hondskloten respectively. We sourced these at Hoenshof in Limburg. We macerated the entire plums for almost five months with a young lambik on a single ex-Bordeaux barrel. Finally, we blended with more young lambik before bottling. Final fruit intensity is 480 grams of Belle De Louvain plums per litre of Pruim. 100% 3 Fonteinen brewed lambik NL 3 Fonteinen Pruim is de trage maceratie van handgeplukte volle (bak)pruimen op traditionele lambik. Zonder toegevoegde sappen, siropen of zoetstoffen. Ongefilterd. Ongepasteuriseerd.
