Ingredients: Water, barley, hops, yeast. Hops: Nelson Sauvin & Mosaic In collaboration with Tou, we made this pale ale to mark their 20th anniversary as an hub of the arts and cultural institution. However Tou's history goes back over 120 years and is intrinsically linked with our own as it was originally an operational brewery for over 70 years. In that spirit, we wanted to celebrate their historical roots in beer as well as their significant contribution to art and creative thinking by making a beer that reflects both. So we took a simple Reinheitsgebot-legal recipe -- something that the German brewmasters of the late 1800s would have tipped their hats to -- and fermented with a blend of yeasts to strike the right balance between fruity esters and drinkability. Then we double dry-hopped with Nelson Sauvin and Mosaic, two New World, fruity hops grown in New Zealand and USA, respectively. The result is a super crisp and straight-forward pale ale by using modern, international techniques to pay homage to times-gone-by. Gratulerer med jubileet, Tou!
