This standard edition of Oude Lambiek Oud Beersel has aged at least one year on wooden barrels. After one year, Lambic can be called Oude Lambiek as the main fermentation of the beer is accomplished. Indeed, it takes one year for Lambic to ferment on wooden barrels. In general, the Lambic is selected from one barrel, but sometimes is is a blend of two or more Lambics.
